This is Arco Aquilus signing in from a hidden beach near Baia do Sancho, Fernando de Noronha, Brazil. I have been enjoying the beautiful balmy weather here and the bounty of delicious foods available to us here in the cove.
There has long been speculation on the diet of merfolk by the biped population. I will set the record straight, we are a peaceful community and co-habitat with the many beautiful creatures that call the sea their home. Our diets are vegetarian and we source our food from what is readily available in the area, primarily tropical fruits and vegetables as well sea-greens.
I have decided to share a few of my favorite recipes so that you can prepare them at home with your land-dwelling friends and family.
Some of my favorite ingredients that I find locally are ginger, lime and coconut. Here is a very simple recipe that you can use to make coconut-lime-ginger popsicles or ice cream.
COCONUT – GINGER – LIME POPSICLE
- Make ginger simple syrup: Combine 1 cup water with 3/4 cup cane sugar on the stove top in a small sauce pan. Add 1 inch piece of ginger that has been cut into 4 pieces. Simmer till sugar has dissolved into the water. Remove ginger pieces from syrup, and transfer into bowl to cool in fridge.
- Once ginger simple syrup has completely cooled beat with one 14 oz can of coconut milk, zest of one lime, and 1/2 cup of lime juice.
- Pour mixture into popsicle molds and set to freeze over night. This recipe will also work in Zoku instant popsicle makers and in your ice cream maker. If you make ice cream from the mixture it is advisable to chill before using to most effectively use ice cream maker.
