Hello My Lovelies!
Arco Aquilus signing in from Western Hawaii, I have found some lovely limes and must appease this sweet tooth I have developed over my travels. I’ve decided to share it exclusively with you.
COCONUT LIME BARS
Preheat oven to 350 degrees F.
Line a 13x9x2-inch baking pan with foil. Butter pan and set aside.
In food processor combine:
1 1/2 cups brown rice flour
1/4 cup potato flour, 1/4 cup corn starch
1/2 cup powdered sugar
1/4 tsp sea salt
3/4 cup butter.
Pulse until mixture is combined. Press crust into the bottom of prepared pan. Bake for 18 to 20 minutes or until edges begin to golden.
beat 4 eggs with 1 1/2 cups cane sugar, 3 tablespoons corn starch, and 1 cup lime juice. Pour filling over hot crust.
Bake for 15 to 20 minutes more or until center is set. In oven toast 2 cups sweetened coconut until golden. Sprinkle over baked lime bars and then cool. Slice before serving.
